One Dish Pesto Chicken and Potatoes



Instead of my original plan to make Chicken Kiev, I came up with this idea. It was delicious!
One Dish Pesto Chicken and Potatoes (Feeds 4)
4 fresh or thawed chicken breasts, rinsed and patted dry
6-8 red potatoes, washed and patted dry
Preheat oven to 350 degrees.
Pound chicken breasts in individual quart sized ziplock baggies with meat tenderizer to 1/4" thickness
Cut potatoes into quarters
Line large jelly roll pan (NOT glass, stone or ceramic) with foil and spray with non stick cooking spray.
Place chicken and potatoes in pan. 
Make Basil Pesto (see recipe below), and pour over top of chicken and potatoes. 
Cover tightly with foil, and bake in preheated oven for 45 minutes.
Remove Chicken and place on plate, take foil off of pan and cover chicken on plate.
Carefully, toss potatoes in pan.
Turn oven to broil, and broil potatoes uncovered for ~5 minutes or to desired crispness. 
Remove potatoes and enjoy!
*To complete this meal, serve with:
Appetizer- Garden Salad
Dessert- Fresh Berry Medley
Basil Pesto
If you like basil and if you like garlic you'll love this! It can be used as a sauce, marinade, dip, etc.
2 cups loosely packed fresh basil leaves, washed and dried thoroughly
2 tablespoons pine nuts 
2 tablespoons freshly grated Parmesan
3 or 4 large cloves of garlic
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper to taste
Blend all ingredients in food processor, adding olive oil slowly
To make this dish extra special, add blue cheese and bacon!! (see below): 
2 Tbsp blue cheese
4 slices bacon, cooked and torn up
Add to food processor and continue to process until desired consistency.
