This is week 2 of my 6 Week Healthy Living Challenge. Please check out the link if you are viewing this for the first time.
Last week I got sick midway through the week, so it cramped my style for a couple days. But now I'm back! I worked out twice last week and once so far this week (good for me since it had been 0 days/wk ;)
As far as eating salads for lunch, it was a success for 4 out of the 7 days. The other days, I at least ate healthy, even if it wasn't a salad.
Today is meatless Monday, which I forgot about as I made a breakfast which included bacon, eggs and sausage for my girl's first day of preschool. So this week Meatless Monday is switching to Tuesday :)
Below is this week's lunch menu:
(FYI- If I am in a time crunch, or am missing an ingredient, I make due with substitutions. I am looking forward to trying some new salad recipes!)
Week 2
Sun: After Church Family Dinner
Monday: BLT Salad (I used leftover bacon from b-fast, it was really yummy)
Tuesday: (Meatless day) Edamame, Corn, Tomato and Bean Salad
Wed Trader Joe's Complete "Baby Spinach" Salad with cranberries, pecans, blue cheese and raspberry drsg
Thursday: Mediterranean Tuna Antipasto Salad
Friday: Fruity Curry Chicken Salad
Saturday: Cranberry Spinach Salad
Week 2's Exercise Plan:
Monday: Met hubby at the gym- jog 1.5 mi, Resistance training- Back and Biceps (curls, lat pull down, etc)
Tues: go on a walk with the girls
Wednesday: off
Thursday: pilates video, resistance- legs (lunges, squats, leg lifts, etc..)
Friday: jog 1.5mi, resistance- chest and triceps (push ups, tricep kick-backs, etc)
