Ingredients
1 pound cooked skinless, boneless chicken breast, diced3/4 cup plain yogurt 2 teaspoons lemon juice
1 teaspoon mustard
1 cup seedless grapes, halved 1/2 cup dried cranberries
2-3 stalks of celery, chopped
1-2 green onions, thinly sliced
1 apple, cored, peeled and diced1/2 c chopped walnuts, pecans or sliced almondsSalt and pepper to taste Directions
Mix yogurt, lemon juice, mustard, salt and pepper in large bowl.
Add chicken, celery, onions, grapes, cranberries, apples and nuts. Spoon into avocado halves or over lettuce leaves.Serve immediately or cover and chill until ready to serve.
